1. Order basics
Enter the hanging weight for the portion being ordered. The page uses that to estimate packaged beef and scale the individual cut estimates.

Each cut has a short guide to help you decide. If your family prefers burgers, smokies or sausage over round steaks and certain roasts, select Grind to increase your available ground-beef pool. Keep the premium cuts you enjoy.

Each product can be 0 lb, or start at 25 lb and move upward in 5 lb increments. Need more for sausages or patties? Go back to the cuts above and choose Grind for less-used steaks and roasts.
These are modeled as pounds of beef deducted from the pool. Actual finished product weights can differ if the processor adds ingredients or experiences shrink.
